This matcha loaf with strawberry glaze works beautifully as a weekend treat, a sweet accompaniment to your afternoon matcha or the centrepiece of a summer table.<\/p>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-28f84493 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis:40%\">\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/moyamatcha.co.uk\/wp-content\/uploads\/2026\/05\/Strawberry-Matcha-Bread-with-Strawberry-Glaze-Recipe-683x1024.jpg\" alt=\"\" class=\"wp-image-116589\" style=\"aspect-ratio:9\/16;object-fit:cover\"\/><\/figure>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/moyamatcha.co.uk\/wp-content\/uploads\/2026\/05\/Recipe-Strawberry-Matcha-Bread-with-Strawberry-Glaze-683x1024.jpg\" alt=\"\" class=\"wp-image-116591\" style=\"aspect-ratio:9\/16;object-fit:cover\"\/><\/figure>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-vertically-aligned-stretch has-background is-layout-flow wp-block-column-is-layout-flow\" style=\"background-color:#edf3e480;padding-top:32px;padding-right:32px;padding-bottom:32px;padding-left:32px;flex-basis:60%\">\n<h6 class=\"wp-block-heading\">Loaf ingredients:<\/h6>\n\n\n\n<ul class=\"wp-block-list\">\n<li>240 g plain flour<\/li>\n\n\n\n<li>10 g <a href=\"https:\/\/moyamatcha.com\/en\/produkt\/moya-matcha-traditional-organic-green-tea\/\" type=\"link\" id=\"https:\/\/moyamatcha.com\/en\/produkt\/moya-matcha-traditional-organic-green-tea\/\"><strong>Moya Matcha Traditional<\/strong><\/a><\/li>\n\n\n\n<li>1\u00bd tsp baking powder<\/li>\n\n\n\n<li>1 tsp salt<\/li>\n\n\n\n<li>220 g butter (room temperature)<\/li>\n\n\n\n<li>200 g caster sugar<\/li>\n\n\n\n<li>4 large eggs (room temperature)<\/li>\n\n\n\n<li>3 tbsp lime juice<\/li>\n\n\n\n<li>1 tbsp lime zest<\/li>\n\n\n\n<li>120 ml whole milk (room temperature)<\/li>\n\n\n\n<li>200 g thick strawberry jam (for the filling)<\/li>\n<\/ul>\n\n\n\n<h6 class=\"wp-block-heading\">Strawberry pur\u00e9e (for the glaze): <\/h6>\n\n\n\n<p>100 g strawberries + 50 ml water + 1 tbsp sugar (boiled and passed through a sieve)<\/p>\n\n\n\n<h6 class=\"wp-block-heading\">Strawberry glaze: <\/h6>\n\n\n\n<ul class=\"wp-block-list\">\n<li>120 g icing sugar approx. <\/li>\n\n\n\n<li>30 g of your strawberry pur\u00e9e<\/li>\n<\/ul>\n\n\n\n<h6 class=\"wp-block-heading\">To decorate: <\/h6>\n\n\n\n<p>dried edible flowers and crushed freeze-dried strawberries<br><\/p>\n\n\n\n<hr class=\"wp-block-separator has-text-color has-cyan-bluish-gray-color has-alpha-channel-opacity has-cyan-bluish-gray-background-color has-background\"\/>\n\n\n\n<h6 class=\"wp-block-heading\">Preparation:<\/h6>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Make the pur\u00e9e: boil the strawberries with water and sugar, then pass through a sieve. Set aside 30 g for the glaze. <\/li>\n\n\n\n<li>Dry ingredients: in a bowl, combine the flour, baking powder, salt and matcha. <\/li>\n\n\n\n<li>Creaming: using a stand mixer fitted with the paddle attachment, beat the butter until light and fluffy (approx. 3 minutes). Gradually add the sugar and beat for a further 2 minutes. Add the lime juice and zest. Add the eggs one at a time, mixing after each addition. <\/li>\n\n\n\n<li>Combining: on a low speed, alternate adding: 1\/3 of the matcha flour mixture, half the milk, another 1\/3 of the flour, the remaining milk and the remaining flour. Be careful not to overmix! <\/li>\n\n\n\n<li>Line a loaf tin with baking parchment. Pour in half the green batter. Spoon 200 g of strawberry jam along the length of the tin, leaving roughly 1 cm from the edges (to prevent the jam from catching on the sides). Cover with the remaining batter. <\/li>\n\n\n\n<li>Baking: bake at 175\u00b0C for approximately 60\u201370 minutes (until a skewer comes out clean &#8211; bear in mind the skewer may be wet from the jam, so test a section of sponge only). If the top browns too quickly, cover with aluminium foil after 45 minutes. Once baked, leave to cool completely. This is an important step! <\/li>\n\n\n\n<li>Glazing: once the loaf has cooled completely, mix the icing sugar with 30 g of strawberry pur\u00e9e. Drizzle over the top of the loaf.
