
Matcha-mazurek recipe

As it happens, we've put together a ready-made recipe for a mazurek (a traditional Polish Easter tart) that ticks both boxes, and is sure to delight both the palate and the eye.
Matcha mazurek is a delicious, minimalist-looking cake, but its smooth surface can also be treated as a blank canvas – go wild with toppings like fruit, nuts or other decorations. Delicious and beautiful 💚

For an 18x18cm tin
Ingredients for the base:
- 100g plain flour
- 50g ground almonds
- 1 teaspoon baking powder
- 25g icing sugar
- 1 egg
- 1 pinch of salt
- 75g cold butter
Ingredients for the matcha filling:
- 150g double cream (36%)
- 300g white chocolate
- 7g Moya Matcha Daily
Method:
- Mix all the ingredients for the base thoroughly, then knead by hand until the dough becomes smooth and elastic.
- Line the tin with parchment paper and press the dough into the base and up the sides. Use a fork to prick it every couple of centimetres, so it doesn't puff up while baking.
- Preheat the oven to 180°C (top and bottom heat) and bake the base for around 20 minutes, until golden. Leave it to cool once out of the oven.
- Now prepare the filling. Bring the cream to the boil and add the finely chopped white chocolate. Stir until smooth, then add the matcha and mix thoroughly once more.
- Pour the filling over the pre-baked base. If you'd like to decorate your matcha mazurek, now's the time to do it.
- Fresh, tart fruit works wonderfully to contrast with the sweetness of the matcha filling, along with your favourite nuts.
