Ingredients:
- 2 eggs
- 30g flour (choose your favorite – we recommend spelt or oat flour)
- 1 teaspoon maple syrup or any other sweetener (e.g., erythritol)
- 3g Moya Matcha Traditional
- A handful of spinach
- A small amount of butter for frying
For the topping:
- 100g Greek yogurt
- 15ml maple syrup
- 2g Moya Matcha Traditional
For decoration:
- Fruit and nuts (we recommend seasonal fruits)
Preparation:
- Separate the egg whites from the yolks. Beat the egg whites until fluffy.
- Blend the yolks with matcha, sweetener, flour, and spinach. Gently fold the mixture into the egg whites.
- Heat a little butter in a pan. Pour in the green mixture and cover the pan. Cook for about 3-4 minutes over medium heat. Make sure your omelette doesn’t burn. Once the bottom is golden, flip it for a few seconds to cook the other side.
- Mix the yogurt with maple syrup and matcha. Top your fluffy omelette with this mixture, alongside your favorite fruits and nuts.
