Cheesecake with matcha for Christmas

In the flurry of Christmas preparations, we are looking for dessert recipes that will impress but will not take a lot of time and energy to prepare. Cheesecake with matcha is exactly such a recipe. An easy and yet remarkable dessert that delights everyone with its creamy interior and distinctive tea accent. In our version of this cheesecake, it is not only the matcha that surprises. We have also added candied orange peel. This subtle addition introduces a pleasant citrus note, but also brings to mind the smell of winter and Christmas.

Ingredients for the bottom preparation:
  • 250 g shortbread biscuits
  • 90 g soft butter
Ingredients for the cream cheese mixture:
  • 8 g Moya Matcha Traditional
  • 1 kg triple-milled curd cheese
  • 150 g sugar
  • 5 eggs
  • 100 g candied lemon or orange peel
  • 200 ml cream 30%
Ingredients for the topping:
  • 200 g white chocolate
  • 100 ml cream 30%
  • Pistachios

Preparation of the bottom:

  • Crush the biscuits in a blender.
  • Add the butter and mix it together. Cover the bottom of a 23-24 cm springform pan with the biscuits and place in the fridge.
Preparation of the cream cheese mixture:
  • Mix the matcha with 40 ml of warm water and leave to cool.
  • Then prepare the cream cheese mixture. Mix the cottage cheese with matcha. Add sugar, eggs (one by one) and candied orange peel (or optionally lemon peel).
  • Finally, add the cream and mix everything thoroughly. Pour the mixture over the bottom of the cake.
Baking:
  • Bake the cheesecake for 15 minutes at 185 degrees, then reduce the temperature to 130 degrees and continue baking for about 60 minutes.
  • After baking, cool it in the oven and then put it in the fridge for min. 6 hours.
Preparation of the topping:
  • Melt the chocolate in a water bath with the cream and matcha. Spread it over the cooled cheesecake.
  • In the end, sprinkle the cheesecake with pistachios.

Psst… you can leave out the pistachios or replace them with other additions, such as dried cranberries.
