This lemonade with matcha and butterfly pea flower (Clitoria ternatea) is a feast for your eyes and taste buds. It amazes with both its looks and taste! It’s an ideal drink to refresh you on a hot day and lift your spirits when the weather is gloomy. We bet you don’t need more convincing to try it out.

Ingredients for sugar syrop:
- 1 cup of water
- 1/2 cup of sugar
- 1/4 cup of lemon juice (from one lemon)
Ingredients for butterfly pea flower tea:
- 2 teaspoons of butterfly pea flowers
- 1 cup of warm water
Ingredients for matcha:
- 3g Moya Matcha Traditional or Daily
- 50 ml lukewarm water
Preparation of the syrup:
- Add sugar and water to a saucepan and bring to a boil. Lower the heat and simmer until the sugar fully dissolves, about 3 minutes. Remove from heat and let it cool. Add lemon juice.
Preparation of butterfly pea flower tea:
- Brew butterfly pea flowers in hot water for 3-5 minutes. The longer you brew the flowers, the darker the tea will be. Afterward, let it cool.
Preparation of matcha:
- Place matcha in a bowl and pour lukewarm water over it. Whisk vigorously with a chasen and let it cool.
Assembling the drink:
- Fill a glass with ice and pour the butterfly pea flower tea, filling about one-third of each glass. Then, add about 50 ml* of syrup, and slowly pour in the matcha. To create layers, pour the matcha gently over the ice cubes. Stir before drinking.
