Ingredients for waffles:
- 190g all-purpose flour
- 10g baking powder
- 2g baking soda
- 3g salt
- 50g granulated sugar
- 6g traditional matcha
- 75g unsalted butter, melted
- 2 eggs
- 80g cream 30%
- 150g milk
Ingredients for matcha cream:
- 3 tbsp mascarpone
- 3g Moya Matcha Traditional
- 2 spoons of maple syrup
- Juice of half a lemon
Preparing the dough for waffles:
- In a large bowl, mix flour, baking powder, baking soda, salt, sugar and matcha.
- In a saucepan, heat the milk, cream and butter. Cool, add the eggs and beat with a whisk until the ingredients are combined.
- Gradually add the wet ingredients to the dry ingredients, stirring gently until you have a smooth batter. Try not to mix for too long to keep the waffles light and fluffy.
- Set the dough aside for 10 minutes to rest.
- Preheat your waffle iron and grease its surface with a little butter or oil (if necessary).
- Pour the appropriate amount of batter into the center of the waffle iron and bake according to the machine’s instructions (usually 3-5 minutes) until the waffles are golden and crispy. Repeat until you have used all the dough.
- Meanwhile, in a bowl, combine mascarpone and matcha. Add maple syrup, lemon juice and mix with a spatula so that the ingredients are thoroughly combined.
- Serve freshly baked waffles with a portion of mascarpone cream and fresh fruit on top.
Our tip: In addition, you can garnish the waffles with maple syrup, mint leaves or sprinkle with a little matcha.
