
Matcha Cinnamon Rolls

Ingredients for the dough:
- 200ml plant-based milk (such as oat or pea milk), warmed to 30°C
- 10g sugar
- 300g plant-based butter or margarine, at room temperature
- 300g flour
- 6g dried yeast
- 7g Moya Matcha Daily
Ingredients for the filling:
- 50g margarine, at room temperature
- 200g sugar
- 5g ground cinnamon

Method for vegan matcha cinnamon rolls:
- In a bowl, combine the dry ingredients – flour, sugar, yeast and matcha – and mix thoroughly until well combined.
- Then add the plant-based butter or margarine at room temperature, along with the plant-based milk warmed to 30°C.
- Knead the dough and shape it into a ball. Cover the bowl with a damp cloth and leave it in a warm place for 30 minutes to rise.
- Once risen, roll the dough out on a floured surface, aiming for a thin, even thickness.
- Using a spatula, spread the margarine evenly over the dough.
- Mix the sugar with the cinnamon and sprinkle this mixture over the margarine-covered dough, making sure to cover the edges too.
- Carefully roll the dough into a tight log, then slice it into smaller rolls of a similar thickness.
- Place them in a deep baking tray or springform tin lined with parchment paper, leaving a little space between each roll.
- Bake the matcha cinnamon rolls in an oven preheated to 160°C, using top and bottom heat, for 20 minutes, until lightly golden.
