
Hojicha bars
Hojicha is a roasted Japanese green tea. Thanks to the roasting process, it develops a nutty aroma and a slightly sweet flavour. It's also caffeine-free. It's a truly unique tea, and one that's also available in Moya's shop in powdered form – hojicha powder. This powdered tea can be prepared just like matcha and enjoyed with milk as a hojicha latte – a caffeine-free alternative to coffee, or a lower-calorie alternative to cocoa ;). It's also a wonderful addition to desserts, which is why we're sharing our recipe for delicious hojicha bars <3


Ingredients (makes 6):
- 50g butter
- 10g Moya Hojicha Powder
- 90g dark chocolate (70%)
- 50g icing sugar
- 175g biscuits
- 8g cocoa powder
- 1g salt
- 30g coffee or cherry juice (you can also add rum or another strong spirit)
Recipe for hojicha bars:
- Crush the biscuits into small pieces and place them in a large bowl. In a separate bowl, combine the cocoa, hojicha powder, salt and icing sugar.
- Place the butter and chocolate in a saucepan. Heat gently, stirring, until a smooth, thick mixture forms. Take care not to let it burn ;).
- Pour the chocolate and butter mixture into the bowl with the hojicha mixture and mix well.
- Add the coffee or juice and mix again.
- Pour the mixture over the crushed biscuits, stir quickly and press into moulds.
- Place in the fridge to set completely for at least 3 hours. If you don't have moulds, leave the finished mixture in the fridge for 20 minutes.
- Once it has firmed up slightly, shape it into bars by hand, wrap in cling film and leave to set completely. You can decorate the hojicha bars with freeze-dried fruit or nuts, however you like. Enjoy!
