
Vanilla Ice matcha latte

Ingredients for Vanilla Ice Matcha Latte:
- 1 heaped teaspoon Matcha Daily (around 4g)
- 200ml milk, dairy or plant-based, such as oat milk or pea milk
- vanilla syrup, to taste
- ice cubes – as many as you like!

Recipe for vanilla matcha ice latte:
- To make your vanilla matcha ice latte, fill a tall glass with ice right up to the top – don't hold back.
- Then pour in your milk of choice, up to about three-quarters of the glass.
- Add 2 tablespoons of vanilla syrup, or more if you like it sweet and strongly vanilla-flavoured. In a separate container, using a bamboo chasen whisk or a milk frother, whisk the matcha with a small amount of water. This will give you a kind of strong green "espresso".
- Slowly pour this over the ice-filled glass you prepared earlier. Give everything a good stir before serving.

Ingredients for homemade vanilla syrup
- 400ml water
- 250g white sugar
- 150g light brown sugar (such as demerara)
- 2 vanilla pods
- 2 tablespoons cognac or brandy!
Method:
- Add the following to a saucepan: the water, both types of sugar, the seeds scraped from the vanilla pods, and the pods themselves. Bring everything to the boil, then reduce the heat and simmer the syrup for 5-10 minutes. Stir occasionally to prevent it from catching.
- Once the sugar has fully dissolved, remove the syrup from the heat and set aside to cool.
- Once cooled, mix the syrup with the cognac and strain it through a sieve into a jar. This will remove the vanilla pods and any specks of vanilla.
- Store the syrup in the fridge.
