Matcha Cupcakes – ingredients for the batter:
- 108g flour
- 138g sugar
- 4g baking powder
- a pinch of salt
- 80g milk
- 40g oil
- 1 egg
- 2 teaspoons vanilla extract
- 73ml water (add it at the very end)
Matcha Cupcakes – ingredients for the cream:

- 50g softened butter
- 50g powdered sugar
- 200g mascarpone
- 1 teaspoon vanilla extract
- 1 level teaspoon of Moya Matcha Everyday
Matcha Cupcakes – batter preparation:
In one bowl, combine the dry ingredients – flour, sugar, baking powder, and add a pinch of salt. In another bowl, combine the wet ingredients – milk, oil, egg, and vanilla extract. Add the wet mixture to the dry one and mix thoroughly with a mixer or whisk to ensure no lumps remain. Finally, add water.
Pour the batter into cupcake molds, filling them roughly halfway to prevent overflow. Bake in a preheated oven at 150 degrees Celsius. Depending on the size of the molds, bake the cupcakes for 8 to 15 minutes. Larger molds may require more baking time.

While the cupcakes are in the oven it’s time to prepare the cream. Place softened butter and powdered sugar in a bowl and use a mixer to beat them until fluffy. Add mascarpone, vanilla extract, and matcha, then beat until you achieve a smooth, flawless consistency.
Matcha Cupcakes – decorating:
After removing the cupcakes from the oven, let them cool before starting the decorating process. The cream is best applied on top of the cupcakes using a pastry bag. You can use a professional bag or a homemade one made simply of baking paper. Finish the cupcakes by sprinkling matcha on top or decorating them with freeze-dried fruits.
