A sparkling refresher for the hottest days. Homemade jasmine syrup, fizzy bubbles, and vibrant green matcha come together in one glass to create a drink as light as a summer breeze. Jasmine’s floral aroma weaves through citrusy freshness and matcha’s gentle bitterness, while the bubbles add a lift of energy. It’s a drink that tastes like a garden in full bloom in the middle of a scorching day.

Ingredients:
Jasmine Syrup (makes enough for multiple servings):
- 150 ml water
- 150 g sugar
- 2 heaped teaspoons of good-quality loose-leaf jasmine green tea
Drink (1 serving):
- 3 g Moya Matcha Traditional
- 50 ml lukewarm water
- 10 ml jasmine syrup
- sparkling water (approx. 100–150 ml)
- lemon juice
- a lemon slice and ice cubes
Preparation
Jasmine Syrup:
- In a saucepan, bring 150 ml of water and 150 g of sugar to a boil. Remove from heat and let sit for a minute.
- Add 2 teaspoons of jasmine green tea and let steep, covered, for 5–7 minutes.
- Strain through a sieve and let cool.
Drink:
- Whisk the matcha thoroughly, making sure there are no lumps.
- Fill a glass with ice (add a lemon slice if you like), pour in 10 ml of jasmine syrup, and add a splash of lemon juice.
- Top up with sparkling water, leaving a little room at the top.
- Slowly pour the prepared matcha over the top.
